From a double baked Stilton soufflé served with a Stilton mousse and a hanepoot saffron poached pear to a leek and bacon soufflé served with brioche soldiers and for the sweet-toothed, a frozen lemon soufflé served with a brandy snap, it’s clear Franc has explored the realm of this French stalwart and enjoyed doing so “the soufflé is the benchmark of any classically trained chef and they’re definitely enjoying a revival at the moment – I wanted to reintroduce them to the South African audience in style and with a dash of wit”, he says.
