Main: One-Pan lemon and herb roasted chicken

Chicken is a very forgiving meat for a beginner cook. By roasting everything in one tray, the juices from the chicken naturally season the vegetables, and you only have one dish to wash at the end of the day.

INGREDIENTS

  • 8 chicken thighs (skin-on)
  • 500g baby potatoes (halved)
  • 300g baby carrots
  • 2 tablespoons of olive oil
  • 1 tablespoon of dried oregano
  • 1 lemon

METHOD

  • Preheat your oven to 200°C
  • Spread the potatoes and carrots across a large baking tray.
  • Place the chicken thighs on top of the vegetables.
  • Drizzle everything with olive oil, salt, pepper, and oregano.
  • Squeeze half the lemon over the tray and tuck the remaining lemon slices between the chicken pieces.
  • Roast for 45–50 minutes until the chicken skin is golden and crispy.
  • Serve it right from the tray for a relaxed, family-style lunch.

Dessert: "Quick-crumb" apple bake

To wrap up a winter lunch, a warm dessert is essential. This crumble is the easiest hot dessert imaginable for a dad on a mission. Using canned pie apples makes it even faster.

INGREDIENTS

  • 2 cans of unsweetened pie apples
  • 1 teaspoon of cinnamon
  • 1 packet of store-bought vanilla cake mix
  • 150g cold butter

METHOD

  • Lower the oven temperature to 180°C
  • Spread the canned apples into the bottom of an oven-proof dish.
  • Sprinkle the cinnamon over them and give them a quick toss.
  • Empty the dry cake mix into a bowl. Use your fingers to rub the cold butter into the powder until it looks like coarse breadcrumbs.
  • Scatter the buttery crumbs evenly over the apples.
  • Bake for 30–35 minutes until the top is a deep golden brown and the apples are bubbling.
  • Serve it hot with a big dollop of thick whipped cream or a warm vanilla custard.
